Pancake Sunday

Weekends are for family

We love our family time and Saturday and Sunday mornings are our family breakfast time. More Sundays now since my daughter is away at college and if she comes home it is Sunday morning she is here. We love to eat hot fluffy pancakes with real butter between the cakes and smothered in syrup!

Keep a mix

I am all about homemade and about making it easy. I have a mix I keep in my pantry that way I can whip up pancakes at any time. This mix makes the fluffiest pancakes and they are just dense enough. This is truly one of my favorite recipes.

Remember when making pancakes slow and medium heat. You don’t want to rush this. Bubbles are good. I also make the mix-up and let it sit, sometime over night in the fridge.

I also write on the container the recipe for the pancakes, that wy I am not always searching for the recipe.

Pancake Mix

I double this and store it in an airtight container.

Ingredients

Dry Pancake Mix

  • 4 cups Flour
  • 3 tbsp Baking Powder
  • 2 tsp Baking Soda
  • 1 tsp Salt
  • 3 tbsp Sugar

To Make Pancakes

  • 1 cup Pancake Mix
  • 1 each Egg
  • 1 cup Milk/Buttermilk
  • 1 tbsp Vegetable oil

Instructions

Dry Pancake Mix

  1. Combine all ingredients.

  2. Store tightly sealed in a cool place.

To Make Pancakes

  1. Preheat electric griddle to medium-high heat

  2. Combine 1 cup of mix with egg, milk, and oil.

  3. Pour batter and cook until bubbles on the surface of the pancakes have popped

  4. Flip and cook until the underside is lightly golden.
